Chocolate and peanut butter is easily one of my favorite combinations ever. These tender, cakey peanut butter donuts dipped in dark chocolate are a slightly less guilty pleasure. They are baked and traditional white flour has been replaced with oat flour. A healthy yet decadent way to start your day.
2 Tbls sour cream
1/2 cup packed brown sugar (coconut sugar is also an option)
1/3 cup milk
1 tsp vanilla extract
1 Egg, room temp
1 cup oat flour (measure 1 cup of old fashioned rolled oats and blitz in a blender to create a fine flour)
1/4 teaspoon Kosher salt
1 tsp baking powder
1/4 cup (50g) dark chocolate, melted (I used 70% cocoa)
Coconut oil spray
Preheat oven to 350 degrees F.
In a large bowl, using a mixer, combine the peanut butter, sour cream and brown sugar. Mix for about 3 minutes until thoroughly combined. Add egg, milk, and vanilla. In a small bowl combine oat flour, baking powder, and salt. Add dry ingredients to the wet and mix until combined. Spray a mini donut pan with coconut oil and spoon batter into the wells. Bake for 10-12 minutes. While donuts are baking melt chocolate in the microwave in 30 second intervals stirring until free of lumps. After donuts have baked and cooled dip into melted chocolate. Let chocolate dry and enjoy!
